WINE & FOOD

Wine, like all food, is a matter of one's personal taste and it ought to be. How boring if we all would like the same food and the same wine. The recommendations are therefore my own personal choice but I believe that those suggestions are applicable to wide varieties of palates. The rules of matching wine with food are simple and never etched in stone.

The wine should enhance your food, therefore never drink a wine with your meal that you are not prepared to drink on its own. You cannot make a meal taste better with an inferior wine.

The wine should not overpower the food nor should the food be stronger in taste than the wine.

A simple rule would be light tasting wines with light tasting dishes and strong wines with strong, seasoned dishes. Forget about the common myth that red wines will go better with red meats and white wines must go only with white meats.

If everything fails, and you cannot decide on a wine, why not try a good rosè or a dry sparkling wine. I find that those two wines go well with most dishes and you can drink them before, during and after the meal.

Be adventurous, try different wines; even good wines that are slightly sweet, will go well with food.

My final recommendation however will be that the best wine is the wine YOU like best regardless of color price or country of origin. Cheers and enjoy your meal.
